Hey everyone hoping that you all are doing great and are staying at home in these critical situation . Now coming back to the dish , here comes another Thursday with another recipe. A purely vegetarian, most easy to prepare and perfect main course for your lunch -- kadhi Pakora.
Before sharing the recipe, I would love to share some facts about this dish which ,I have gathered by reading some articles or watching some videos. I hope this section doesn't make you guys bore , if it does please let me know.
GET TO KNOW ABOUT THE DISH
- Some believe that curry is a dish originating from Rajasthan as there is scarcity of water so they used to make more use of curd and buttermilk instead of water .
- As the dish moved northwestern, they added the pakoras(fritters) to this curry which made the dish more delicious and finger- licking.
- As this dish is made up of gram flour and curd, it contains very less proportion of gluten in it and is very digestible.
- And it contain lots of curry leaves which makes it smell like heaven and makes it good for diabetic patients. Also we all know that curry leaves contain lots of nutritional value one of them being making your hair strong.
- Also I just got to know that its an amazing dish for pregnant women too as it is rich in folate (folate helps to make red blood cells), vitamin B6 and iron.
Now let's get started with the recipe.
- Gram flour -- 1cups
- Water -- 2cups
- Onion -- 2 (finely chopped)
- Garlic -- 5-6 cloves (finely chopped)
- Curd -- 1/4 cup
- Water-- 1 cup
- Curry leaves -- 10-15 leaves
- Green chilli -- 3(slit from the middle)
- Red chili -- 1
- asafoetida -- a pinch
- Red chilli powder --1/2tbsp.
- Turmeric powder -- 1.5tbsp.
- Salt -- according to taste
- Mustard seeds -- 1 tsp.
- Cumin seeds -- 1tsp.
- Cooking oil
COOKING PROCESS :-
- Let's start with the pakoras first. So the first step would be to prepare a thick batter for our pakoras (fritters).
- For that take a bowl, add 1/2cup of gram flour, 1/2 tbsp. of turmeric powder, salt according to your taste,1 onion finely chopped , 1-2 green chilli finely chopped . Mix them well using water and make a thick consistency batter out of these. Make sure that the batter doesn't have lumps in it.
- So one trick that my mother taught me for checking whether the consistency of the batter is good and is mixed well is take some water in a small bowl and drop a little part of the batter in water , if it floats and comes on top of water that means it a perfect batter and if it doesn't then you need to mix it well.
- Now heat some oil in a kadhai and deep fry all the Pakoras. They should be of medium size.
- Now our next step is to prepare the kadhi which is the most easiest part in the whole recipe .You just need to add 1/2cups of gram flour, salt according to your taste , 1 /4 cup of curd and half tsp. of turmeric powder in a bowl.
- Add 1 cup water to it and prepare a thin consistency batter (watery batter) out of it .
- Heat a pan or kadhai with 2tbsp of oil in it, add cumin seeds and mustard seeds to it, also add 7-10 curry leaves to it . when it stops splattering.
- Add 2 green chilli and garlic finely chopped to the kadhai, fry them for 5-10 seconds. Then add 1 finely chopped onion to the kadhai. Fry the onions until it become transparent .
- Now add the watery batter to the kadhai , mix it well and cover the lid , cook it for 10 -13 minutes. After that remove the lid and check the consistency of kadhi.
- After it reaches the boiling stage it should be slightly thick if it's not boil it for another 5 minutes. Now add the pakoras we prepared earlier to the curry and switch off the flame and let the curry and pakoras settle down and soak the flavor of curry leaves. Make sure you cover the lid properly .
- One more tip that amma taught me is never to boil the curry too much , or it will start to cuddle a little. I hope this tip will save your curry too.
- The last step is to add a punch into the kadhi by adding a tadka .For that heat a tadka pan with 3-4tbsp. of oil in it. After it becomes hot add a pinch of asafoetida, 1/2 spoon of cumin seeds ,1red chilli, 1/2 tablespoon of red chilli powder and 5-6 curry leaves.
- When the curry leaves stops splattering add the tadka to the kadhi Pakoras and cover the lid properly so that it absorbs all the flavors from the tadka.
Serve it hot with chapatis , or rice or zeera fried rice . I personally love it with rice a spoon of ghee on top of it . Oh its making mouth watery while writing.
I am a student and stay away from my family for my studies. I generally prepare curry I mean only curry without Pakoras , it tastes as good as it tastes with pakoras . You can try this too when you are in hurry . It's a simple, easy , quick and healthy recipe .
Also this keeps reminding of my home as this is the most common lunch my family have ,like out of 7 days we will be having curry at least 2 days in a week but it never bores me as my amma makes the most delicious curry ever.
