I know this is a hard time for us, we all are getting bored and feeling sad and anxious specially after listening to the news but always remember we are the safest while staying indoors. Its the best thing we can do right now and this is for our betterment.

Coming back to today's recipe , it's everybody's favorite --- Aloo Paratha. Common is their anyone who doesn't like this dish. Atleast I am not one of them. I just can explain how much I love Aloo Paratha.

Coming back to today's recipe , it's everybody's favorite --- Aloo Paratha. Common is their anyone who doesn't like this dish. Atleast I am not one of them. I just can explain how much I love Aloo Paratha.
KNOW ABOUT THE DISH:--
- Aloo paratha is one of the most popular breakfast dishes throughout the western, central and northern regions of India as well as in Pakistan.
- Parathas are associated with Punjabi and north Indian cooking. Do you know that the word paratha is derived from the Sanskrit S. पर, or परा+स्थः, or स्थितः
- It is generally served with ghee , butter, coriander chutney , curd, or pickles.
INGREDIENTS:--(serve-- 3-4 person)
Potatoes-- 3-4 (medium size)
Cooking oil--5-6tbsp.
Cumin seeds --- 2tbsp.
Mustard seeds --2tbsp.
Salt-- As per taste
Chat masala -- 1tbsp.
Coriander powder--1tbsp.
Turmeric powder--1 tbsp.
Green chilli ---2-3 (slit from the middle)
Coriander leaves--- handful of them finely chopped
Onion-1 (large) finely chopped
Ginger-1/2inch finely chopped
Garlic 4-5cloves finely chopped
Flour--2cups
Asafetida- a pinch
PROCESS:---
- Let's start with boing the potatoes for the filling. For that wash the potatoes well with water. Then take a cooker, fill the cooker partly with water, add 1tablespoon of salt to it. Add the potatoes in the cooker. Cook them for 3-4 whistle.
- Until the potatoes are being cooked let's prepare for the dough.
- For the dough, take a large bowl, put 2 cups of flour in it , add 1/2 tablespoon of salt and 1tableapoon of carom seeds to the flour.
- Using water make a dough which is not very tight not very soft. Use 1tablespoon of cooking oil and rub it onto to the ready dough.
- After the dough, its time to go back to the potatoes. Lets work on preparing the filling for our aloo paratha. So after 3-4 whistles open the lid and using a folk check whether the potatoes are done or not. If you can easily prick it that means its done and if you can't that means you need to boil it for one more whistle.
- When the Potatoes are boiled ,take them out, cool them ,peel them and mash them.
- For the filling take a wide pan or kadhai , heat 2tbsp. of oil in it, then add cumin and mustard seeds to it and fry them for 2seconds.
- When the seeds stop splattering add, green chilies, finely chopped ginger and garlic and fry them until the raw smell is gone. After that add the onions and Fry them until the onions get transparent.
- Now add all the powdered spices i.e. turmeric powder, coriander powder, chat masala and salt according to taste, fry them for another 2-3minutes.
- And now add our star ingredient mashed potatoes and fry them for another 3-4 minutes.
- Garnish them with a handful of coriander leaves and your stuffing is done.
- Now its the show time. Time to prepare the parathas , for that take small portion from the dough, make a ball of medium size, roll them out into 3-4 inch circle.
- Fill a spoonful of stuffing in the center. Seal the dough and round it with the help of your fingers.
- Using a rolling pin, roll them into a round parathas. Using oil ,ghee or butter roast them for 3-4 minutes on each sides.
- Serve them piping hot with some pickle, curd or coriander chutney.

- Handful of mind leaves
- Salt-- as per taste
- 1roasted tomato
- Mustard oil--1tbsp.
- Lemon juice-- 1/2tbsp.
PROCESS:--
Take a grinder pot put the ingredients inside and make a thick paste and your chutney is ready. If you want to lower down the consistency of the chutney add some water to it .
You can serve this chutney not only with Aloo paratha but also with any other kind of Paratha and chapatis .
